Understanding Makhana Quality

As one of India's largest raw fox nut suppliers, we know quality better than anyone. The roasted makhana you enjoy is only as good as the raw fox nut it started from. Learn how makhana is graded and why Shreeja Lakshmi is the trusted source behind India's favourite snack.

What is Sutta Grading?

The Traditional Indian Standard

Sutta is the traditional Indian grading system for makhana, used by traders and suppliers across Bihar and beyond. It is the most widely recognized standard for classifying fox nuts by size and quality.

The grading is determined by the number of makhana pieces that fit into a standard measure. Fewer pieces fitting in the same volume means each individual makhana is larger — and therefore of a higher grade.

In simple terms: higher sutta = larger, more premium makhana. A 5 sutta makhana is extra large and considered the top grade, while a 4 sutta is medium-sized and more affordable — but still excellent in quality.

How Sutta Grading Works

1

Standardized Measurement

A fixed-volume container is used as the standard measure across the makhana trade.

2

Count-Based Grading

The number of makhana that fill the container determines the sutta grade. Fewer pieces = larger size = higher grade.

3

Quality Correlation

Higher sutta grades correlate with better crunch, more uniform shape, and a more premium appearance.

How to Identify Quality Makhana

Use these indicators to evaluate makhana quality before you buy — whether online or in-store.

  • Look for uniform white or cream color — avoid yellowed or discolored pieces
  • Check for round, unbroken pieces — broken makhana indicates rough handling
  • Bigger size generally means higher grade — compare to known sutta standards
  • Should be lightweight and porous — heavy makhana may indicate excess moisture
  • No dust or debris in the pack — clean makhana is a sign of careful processing
  • Crispy and crunchy when roasted — soft or chewy texture means stale product
  • Mild, neutral smell with no mustiness — foul odor signals improper storage
  • Consistent size throughout the batch — mixed sizes indicate lack of proper grading
